That's essentially what happens as it cools in about 5 minutes. When grilling for only 2 minutes, it retains very little heat. But I don't believe even 5 minutes are necessary. But my porkpie hat is totally off to you. The only tip I would offer is don't let the fish cool before refrigerating it. Current wisdom is straight from the stove to the fridge.
