If you don't have this book, I highly recommend getting it not just for that sauce, but for so many great recipes and general techniques. But a slotted spoon with holes might work better :)Helenhttps://www.blogger.com/profile/12271344371852988017noreply@blogger.comtag:blogger.com,1999:blog-17422713.post-34569595862308235342012-04-06T20:59:49.645-04:002012-04-06T20:59:49.645-04:00Thanks for your reply! I will get a better spoon.Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-17422713.post-28828196869848065962012-04-04T13:39:29.534-04:002012-04-04T13:39:29.534-04:00Congrats on your first egg!
About the seconds o...Congrats on your first egg!

About the seconds one... The yolk can often come out a bit to one side or the other. The important thing is that it's completely enclosed in the white. Some possible reasons for seriously misshapen eggs:

-difficult eggs with very runny white

-pulling the white off the yolk when draining. this usually happens with eggs whose gelatinous white is not all that gelatinous. it can start dangling through the holes of a slotted spoon. when you pour the egg into a cup, some white can end up stuck in the wholes and getting pulled off the yolk. once it separates, there is no way to glue it back on. the best way to deal with this issue is to wipe the underside of the slotted spoon quickly and get the egg into the cup quickly before parts of it start getting stuck in the slotted spoon holes.

-pouring the egg into the pot slowly can result in the white getting pulled off the yolk. bring the cup to the surface of the water (right in the center of the vortex) and dump the egg in as quickly as possible.

It does take a bit of practice :)

If you want to take a picture next time and e-mail it to me, I might be able to help more :)Helenhttps://www.blogger.com/profile/12271344371852988017noreply@blogger.comtag:blogger.com,1999:blog-17422713.post-60597233366437538172012-04-04T01:41:57.815-04:002012-04-04T01:41:57.815-04:00Thanks for the video! It looked almost like a egg over easy, with the yolk on one side and not centered. Have you ever seen this happen and if so do you know what went wrong?Anonymousnoreply@blogger.comtag:blogger.com,1999:blog-17422713.post-40381559812577880722012-03-26T19:14:15.178-04:002012-03-26T19:14:15.178-04:00This is a great video! My first one always gets cold and I did not dare put it back in the pot until I saw your video.Annahttps://www.blogger.com/profile/01569119271627192710noreply@blogger.com
