This definitely doesn't taste as good and I would only uses in case of allergy to egg. Boiling eggs for a minute before cracking them for mayo will reduce salmonella risk, but not get rid of it entirely. Also, home made mayo needs constant refrigeration and should be used within a few days. If it makes you feel better, Julia Child loved Hellman's mayo. I've never tasted another brand that is edible. I've tried making it myself. I kind of wanted to try making it the real way with oil and raw egg but not sure about the raw egg. Any thoughts on this?
