  1. I learned this from an ex Disney white-tablecloth chef. He, like me, asked: why do you need the parallel cut? It is difficult to do right and adds nothing. Making the first radial cuts is easy and gives you more uniform slices.

  2. This method is more intuitive, IMO. Don't fight the onion! Just like cutting meat, it helps to know the anatomy.
