Kitchen Knives and Their Tasks

You might have seen your Grandmother slicing potatoes with a steak knife, or your Mom dicing onions with a paring knife.  Today is the day to find out if there is a better way.  Do you know which knife to use for mincing garlic?  How about for removing silver skin from meat?
