Hervé This Inspired Chocolate Mousse

serves 6

200 g of 70% chocolate (or as close to 70% as possible)
165 g brewed earl gray tea or coffee (decaf is fine)
1 Tbsp grand marnier (or more tea or coffee)
1/2 tsp vanilla extract
4 egg yolks from large eggs

Unfortunately, this mousse does require some expensive toys. Here is what I use: 
  • iSi Siphon -- mine works on hot and cold preparations, but there is a cheaper one that only does cold preparations.  
  • Siphon tips -- my siphon came with tips (I've had it for a few years), but it looks like now you buy them separately.
  • N2O chargers
