1 large shallot
1/2 cup dry white wine
1 stick unsalted butter (if using salted, don't salt much in the end)
1/2 tsp freshly squeezed lemon juice
2 yolks from large eggs
Salt and Pepper to taste
1 Tbsp chopped chives, dill, or tarragon (optional)
