The dielectric constant is the ratio of the permittivity of a substance to the permittivity of free space. It is an expression of the extent to which a material concentrates electric flux, and is the electrical equivalent of relative magnetic permeability. Adding salt to water makes it less permeable to the microwave radiation. This means the egg cooks more gently and is less likely to overcook in spots.

Hooray! This is my new go-to method for poached eggs. I've tried several methods, but this is by far the easiest and most fool-proof way to get the nicest looking eggs. Thank you!

Hi Kari,

No need to buy a microwave. I did a recent video on strainer poached eggs. I think those are not only easy and reliable, but also scalable. And a good chinese collander that you need for those is only $13. I doubt you'll find a microwave for that price ;)
